Disappearing Act

Ah there I go again.

Here is my food log:
Breakfast: Skipped (bad, bad)
Lunch: Guacamole Sandwiches + Watermelon
Dinner: Mexican! Beans + Rice + Salsa + Yogurt in one big bowl

But successfully completed a hectic day with healthy food!

Lunch on Sunday!

This was a yummy sandwich! Brie, tomato, basil, garlic olive oil on sourdough, and grilled stove top!

Saturday Dinner: Stir fry tofu! (with black bean sauce, green peppers and soy sauce!)

Saturday night with the husband involved a cheese platter, strawberries & chocolate love!


Saturday Lunch: Pasta with tomato basil fennel sauce, it tasted pretty close to Trader Joe’s arrabiata sauce.
Snacks: Honey Nut cheerios with almonds.

I am busy cleaning and Notting Hill is running on TV!

Hi ya’ll!

I had a bummer of a work day – I was researching and reading so much, that time went by faster than I’d imagined, and I dont have any tangible “results”. Remind me to start on that “Get things done (GTD)” type lists ๐Ÿ™‚

I dreamed up a dream of being a yoga teacher for a little bit, and then went back to work! I do love what I do now too, its hard to pick when you love more than one thing!

Breakfast smoothie in my “magic bullet”


It was handfuls of spinach, strawberries, half a banana, quarter of a beetroot (pink!), organic milk!

And I made this really pretty salad
Spinach, strawberries, banana! Say fiber!

Dinner was Tomato Couscous (which was so yummy I ate it so fast, and then went “oh darn!”.

But trust me when I say – it was healthy tasty and spicy!

I am happy! I feel real, like I exist, and am happy, after a very long time!

I read a book, god knows how many I have abandoned. Reading a book just feels like coming home, so comfortable, like I was meant to do this and just this ๐Ÿ™‚

I read this:

Lunch was: Chappati, Bhaingan Masala, Yogurt and pickle with a fresh organic plum!

Dinner is a big question mark as of now ๐Ÿ™‚

Good bumps on the way:

Started working a normal work day, ran 3 miles for 3 days so far, eating really healthy and the ocassional pizza ๐Ÿ˜›

New love: Dark Chocolate (I only buy pre-portioned ones!), real fruit bars, tried almond butter which I’ve been wanting to for a long time now!

P.S: Some things that happened to me on the downside.

I almost bought a book about “introverts” – I entered the payment info and then said to myself, I dont need more negativity. I reassured myself that all people feel that way at some point, maybe I feel it more than others, and thatsย A-OK.

Things I need to do: get back to a yoga routine, as much I like gym-ing (I dont!), and I need some motivation to get some work done.

I also tried this new bread! Its bread, but can I just say it was so freaking AWESOME!

Its called Orowheat 3 seed oatnut bread, I’ve bought it 2 weeks in a row now. It has sunflower seeds, poppy seeds, sesame(?) – its yummy. I could eat just toast!

This post is super scatter-brained but hey, better post than nothing.



I attempted to make my own granola bars. Instead I got oats soaked granola.

It looked like this with bits of chocolate in it. However it was just wasn’t dry and was very moist. I had added olive oil & a little organic milk which soaked the oats.

I liked eating it yesterday, but today it tasted real bad. Oh well.. failed attempts.

Here is the modified recipe (which wont fail!)

Almond chocolate oat granola

1 cup rolled oats (Red Mill)

1 /2 cup almonds

2 pieces of dark chocolate chopped up

2 tbsp honey

Method: Toast the oats & almonds in a cookie tray at 325 in the oven for about 10 minutes. Mix in the rest of the ingredients and toast for another 10 minutes.

Total cooking time: 20 minutes

Healthy Meal Planning

I knew I needed to go get groceries for next week, and I sat down for maybe 15 minutes and made a healthy week-long meal plan!

I thought it might be worth sharing! This is mostly only dinner, cause lunch and breakfast are typical cereal, oatmeal, leftovers etc. Saturday is indian food day, for the husband ๐Ÿ™‚


  • Brunch: Dosa + Sambar, Banana-berry smoothie
  • Dinner: Stir-fry cabbage, Curd rice




  • Rice + Tofu stir fry with veggies


  • Tuna salad sandwiches, Avocado sandwiches



I am trying to estimate cost of groceries this week, I think it will be about $30, maybe lesser cause I have a lot of the things I need from last week. I’d rather eat this than eat out and splurge $30, only to feel bad afterward! ๐Ÿ™‚

I wish I woke up everyday raring to go and feeling on top of the world.

But today started out feeling messed up. I decided to get things in order by…CLEANINGย  :), its my erase-all-bad-thoughts and feel-better plan.

1. Laundry – check

2. Make lunch – check

3. Do dishes – check

There’s a lot more to do, but my husband decided to stop me from cleaning, and I got a 5 minute sermon on how I should be doing something more productive. It completely killed any motivation I had to do anything.

At around 3pm I got back on track – sat at the computer – did I was supposed to do. I have one more hour of work to finish.

I really want to get a 2 mile run in today but I feel like I have no energy.

Keeping a smile, and moving along day ๐Ÿ™‚
